Aiyama brewer’s rice is challenging to grow due to its tall height and large rice ears, so the production quantity is tiny. Aiyama is often called a thoroughbred brewer's rice with lineage tracing back to Yamadanishiki and Omachi. It is soft, smooth, sweet with higher acidity. This rice grew in popularity when Takagi Shuzo of Juyondai bought these scarce seedlings and used Aiyama rice in their sakes.
