Akita’s sake history started in the Edo period, early discovery of silver in the 16th century attracted miners, engineers, carpenters and merchants from all over Japan. The mountains offer little entertainment, and Sake became the next best option. At its peak, there are over 700 liquor stores, and such fierce competition has lead to the refinement and great sakes of the prefecture. Sakes here tend to be tight, compact but very well brewed and balanced with subtle nuances.
