This was an experimental project, where unpasteurised sake was allowed to mature in used French Oak Barrels. Prior to filling, the oak barrels were charred, thereby imparting hints of whisky-peat aromas.
A very complex sake with a creamy mid-palate, stone fruits, Christmas Fruit-cake & toasted brioche.
