All Hiwata labels from Hagino Shuzo are brewed in the Yamahai and Kimoto style where lactic acid is allowed to occur naturally. More often than not, these styles are robust and rich with some wild qualities, often enjoyed at warm temperatures.
However, the Hiwata brand has turned this stereotype on it's head. The Himawari, sunflower label is the poster child for summer which draws up imagery of a bright and refreshing sake enjoyed chilled and crisp.
