Raw Rice: Ibi no Homare
Like the finest ingredients in the most spectacular dishes, the Japanese sake produced by the Sugihara family (just father and son in the smallest brewery in the whole of Japan) uses only the finest produce that Gifu has to offer. This is truly the only partnership in sake brewing between the land and its people, showcasing what the region has to offer. The rice (Ibi no Homare) used has been created specifically for the local soils, and two rice farmers grow only this rice variety using techniques to increase quality and not quantity. During the brewing process, everything is done by hand using the most traditional of techniques, creating unique and beautiful sakes that truly speak of where they come from.
Sugihara-san has an unwavering passion to fully unearth & showcase the possibilities of the rice varietal, Ibi no Homare, which is proprietary to the brewery. The quality of rice harvested was deemed suitable for a lower polishing ratio & IBI Gold was launched at a 40% semaibuai. An amazingly rich & powerful sake with hints of vanilla, melons & almonds. Astoundingly creamy mouthfeel & a long, complex finish.
