Polishing the rice down to 50% qualifies it to be classified as a Daiginjo. However, Takagi Shuzo has decided to classify it as a Ginjo.
A well balanced sake with a mild sweetness as compared to your regular Juyondai. Recommended to drink chilled at 5-10°C.
