The nose on this unpasteurized “Nama” sake is a fruity collection of apple, pear, melon, mango, and floral aromas. It is full-bodied and fun, and is actually a genshu at only 14% alc, which gives it that fat puffiness. CEL-24 is a newly released yeast strain from Kochi prefecture & it offers a gorgeously fruit-forward bouquet with a strikingly clear & light finish, very characteristic of sakes from Kochi. Unpasteurised, this sake burst with vibrant freshness on entry with an elegant & rounded overall mouthfeel.
