Brewed using the breed of sake rice Sake Mirai developed by the notable Juyondai President Takagi Tatsugoro. Mr. Takagi spent 18 years in research of a new species of sake rice and he came up of "Ryuu No Otoshigo" from the Yamadanishiki rice breed used for brewing the Juyondai series of sakes.
The first layer of aroma is a typical Kyokai Number 9 Yeast. Very soft, flowery fragrance. Orange blossoms, hint of olives and greens. Moderately sweet, light acidity, good umami and a long finish with touch of savoury.
