Established since 1825, Nakazawa Shuzo's brand Matsumidori uses carefully selected high quality sake rice & soft water from the underground streams of Tanzawa Mountains. Up till today, they still believe in using the traditional methods of handmade sake.
A phantom brewery yeast that was discovered in 1909 but never used in sake brewing has been revived by Ryo Kiwada, the 11th generation of Nakazawa Shuzo. They believe that this yeast produces sake flavours that cannot be produced by normal mainstream yeast. It is characterised by a slight sweetness and a refreshing acidity that is unique to the phantom yeast that came from the Meiji era.
Aromas of green apple and muscat. Elegant sweetness and acidity like white wine with a slight refreshing fizz. The texture is smooth and velvety from its's Genshu style (no water dilution), but has a lower alcohol percentage compared to standard Genshu. Recommended to drink well chilled 5-10°C.
