Unpasteurised. This sake has light, sweet and fruity flavours. There is a candy-like sweetness and the sake is resolved with a dry spice. Yamadanishiki Ginjo is much lighter bodied than the Omachi Ginjo but similar fruits. This Junmai Ginjo can be paired well with sashimi and other fish. A great aperitif that has fruity aromas with hints of melon and lychee, accompanied with a rice malt flavour. Discernable fresh spritz upon opening, this sake evolves beautifully for up to a week. With all Taka sakes, there is love tension and grip, and crisp sharp finish.
