If you’re looking for something elegant and refined, something light and aromatic, this is it. A sub class of Junmai Ginjo-shu, Junmai Daiginjo 純米大吟醸 is brewed with very high polished rice (at least 50%) and even more precise and labour intensive methods. Along with Daiginjo-shu, Junmai Daiginjo is considered the pinnacle of the brewer’s art; this is also often compared to the Grand Crus of the wine world.
Because they’re generally light, we love to have them on it’s own or as an aperitif, or with foods that are not too rich to overwhelm the sake flavours.
