Generations of sake makers make their sakes the traditional way, but in the recent years, a small group of sake makers are making new waves. Inspired by the international appeal of wine, the breweries behind well-known labels Hakugakusen and Banshu Ikkon have started adopting new methods such as the use of wine yeast as well as barrel-ageing in Mizunara, Japanese oak!
The sakes in this Plus Age series are aged in barrels to achieve a deep taste that cannot be imitated by any other method. Sake, which has a mellow aroma due to barrel aging can develop a rich aroma that ripens by further aging and changes to a beautiful amber-like color.
Our team has tried these single-cask sakes and we absolutely loved it. Discover these stunning expressions and enjoy with protein-rich dishes and company of good friends!
