Brewed using the traditional kimoto method like all Daishichi sakes, this Junmai Daiginjo is the first sake to be produced using the super-flat rice-polishing technique developed by Daishichi to eliminate components that might result in undesirable flavours. The flat rice polishing ratio of 51% is comparable to the normal rice polishing ratio of 34%.


Delicate sake with a clear taste with an underlying richness. Minowamon is the name of the main gate of Nihonmatsu castle, a beautiful structure dating from the Edo Period. Enjoy chilled 10-15 deg c. Great with kappo or kaiseki. We like it paired with grilled fish, boiled king crab, sashimi, asparagus in butter sauce, and sushi with uni, ikura or chutoro.
