Bodaimoto is an age old method pre-dating even the Kimoto method, this creates a playful sake with a full mouthfeel, zesty sweetness and flavours of ripe fruit. Floral aroma of white bouquet, green apple & grapefruit followed by a mineral nuance. This sake is a great bridge-sake with wine, sharing some resembling characters with Chenin Blanc grape. Crisp and clean finish, best served chilled. Perfect for cheeses.
