Mr Noguchi Naohiko is a legendary Toji (head brewer) and shokunin from Japan. He is lauded for his advocacy of the Ginjo trend and the revival of brewing sake the Yamahai way. Over the years, he has brewed countless bottles of award-winning sake.
Mr Noguchi has been brewing sake for over 70 years and is always pushing the limit and striving to take his craft to the next level. Albeit retiring twice, with his fervent passion for sake and brewing, he could not resist the urge to come out of retirement time and again. In 2017, Mr Noguchi founded a new Shuzo - the revolutionary Noguchi Naohiko Sake Institute, with hopes of passing on his craft to the next generation and brewing new sakes that could top his previous creations.
Refreshing sour fragrance of strawberry. Fresh, elegant and clean with sweet umami and a long crisp finish.
