Raw Rice: Niigata Local Rice
Aesthetics of subtraction is the brewing philosophy of ZEN 禅. ZEN is named after a Zen Buddhist priest (a toji, who is also the head priest of a temple, apparently). A deliberate attempt to suppress aromas & sweetness that might serve to distract the senses, this Kimoto sake comes alive when enjoyed with food. Dry but full bodied. Best enjoyed at 12-15 degrees celsius.
