The brewery Sanyohai Shuzo was founded in 1837, brewing high quality sake in Shiso, a mountainous land located in the Harima region of the Hyogo Prefecture. Hyogo is Japan's best grain-producing region and is also home to the Special A District of Yamadanishiki, the King of Rice.
The PLUS AGE project came about when a handful of these traditional brewers who have been making sakes for generations decided to push boundaries and age sakes in Mizunara barrels. The Banshu Ikkon Plus Age 2019 Junmai Daiginjo is aged 11 months in Mizunara and then bottle conditioned. Our team has tasted this and it is stunning now, with potential to improve even more with age in the next 5-10 years. Enjoy notes of stewed fruit, with vanilla, spices and cocoa! Soft, smooth, with sweetness and umami, depth and complexity. The finish is long and the characteristics of the Mizunara really comes through.
